Oven-Bàked Chicken Pàrmesan

ingredients

  • 2 tablespoons olive oil
  • 2 chicken breasts About 1 pound of total chicken
  • 1 egg
  • 1 cup of panko breadcrumbs
  • 1/2 cup grated fresh parmesan cheese
  • 1 teaspoon dried oregano
  • 1/2 teaspoon of garlic powder
  • 1 teaspoon of kosher salt
  • 1/2 teaspoon of black pepper
  • 1 cup marinara sauce
  • 1 ½ cup grated mozzarella
  • 2 tablespoons chopped parsley optional, for garnish

Instructions

  1. Line a baking sheet with aluminum foil, brush the foil with olive oil. Adjust the oven rack so that it is one second from the top. Preheat the oven to 400 ° F.
  2. Cut the chicken breasts in half and form a uniform thickness: Cut in the center of the chicken breast as if you were going to cut it into a butterfly (opening it like a book), but cut thoroughly to get two equal pieces.
  3. After cutting the chicken breasts in half, place them in a one-gallon zipper bag, seal them, then pound them to an even thickness using a meat pestle or a rolling pin. You can also place the chicken breasts between two layers of plastic wrap instead of a zipped bag if you prefer.
  4. Wipe the chicken breasts with a paper towel, then season with salt and pepper.
  5. In a shallow dish, combine bread crumbs, grated parmesan cheese, salt, pepper, garlic powder, oregano, and black pepper.
  6. In another shallow dish, whip an egg.
  7. Dip a chicken breast in the egg and then in the breadcrumb mixture. Make sure the chicken breast is fully coated in the crumb mixture and gently press with your hand to help the crumbs stick to the chicken. Place the chicken breast on a prepared baking sheet. Repeat with the remaining chicken pieces.
  8. Place the baking sheet in the oven on the second from the top rack. Bake for 15 minutes or until cooked through.
  9. Turn chicken over, pour 1/4 cup marinara sauce over each piece of chicken, and garnish with cheese. Return to the oven. Turn on the grill. Grill for 2-4 minutes until cheese is melted and bubbling and chicken edges are golden browns.
