Crock Pot Chickén Stew

- 2 boneless chicken breasts, cut into small pieces
- 2.5 teaspoons Italian seasoning
- Salt pepper
- 1 tablespoon of butter
- 1 medium onion, diced
- 4 red potatoes, sliced
- 1 cup of baby carrots
- A cup of green beans
- ½ cup celery, diced
- 10.5 oz. chicken cream
- 1 cup of whole milk *
- 1 cup sour cream
- 1 oz dry ricotta vinaigrette mix equal to 2 tablespoons
- 1 teaspoon of parsley flakes
- 5 bacon slices, cooked/crumbled, to garnish (optional)
Instructions
- Melt the butter in the bottom of the casserole. Add all the vegetables on top and stir to coat with butter.
- Season the diced chicken with the Italian seasoning and desired amounts of salt and pepper.
- Combine soup, milk, sour cream and rancher dressing mixture. Temper the mixture by heating for 30 seconds in the microwave. Pour over the chicken.
- Cover the casserole and cook over low heat for 6 to 8 hours. Low and slow is best with milk and dairy products.
- Sprinkle with parsley and crumbled bacon and serve. This tastes delicious on cookies!
