For steaks:
- 4 steaks of the cube
- 2 cups of buttermilk
- 3 big eggs
- 2 teaspoons of hot sauce
- 1 teaspoon Worcestershire sauce
- 1 cup all-purpose flour
- 1/2 cup of cornstarch
- 2 teaspoons of salt
- 1 teaspoon of garlic powder
- 1/2 teaspoon of pepper
- 3/4 teaspoon of Cayenne
- 4-5 cups of oil for frying
For the sauce:
- 1/4 cup shallots or finely chopped onions
- 1 teaspoon minced garlic
- 3 tablespoons all-purpose flour
- 1/2 cup of milk
- 1 1/2 cups chicken or beef broth
- pinch cayenne
- Salt and pepper to taste
- Optional: ground pepper and parsley for garnish
Instructions
For steaks:
- In a large bowl, combine buttermilk, eggs, hot sauce, and Worcestershire sauce.
- In another bowl, combine flour, cornstarch, salt, garlic powder, pepper, and cayenne pepper.
- Dip the steaks in the buttermilk and marinate for at least 1 hour. (2 hours preferred.)
- Dip the steaks, one at a time, in the seasoned flour mixture, coating each side, then in the marinade and then in the seasoned flour, then place on a baking sheet. Refrigerate for 15 minutes.
- Add oil to the cast iron skillet or pan and heat the oven to medium-high heat. Preheat the oven to 250 degrees.
- Once the oil is hot and ready, fry each steak on each side until it is golden brown. Drain on paper towels, then place the steaks on baking sheets lined with parchment paper and place it in the oven while preparing the sauce.
For the sauce:
- Add 1/4 cup of the frying oil in a frying pan over medium heat.
- Add the shallots or onions and garlic and cook for 2 minutes, stirring.
- Then add the flour and cook creating a red (think of a delicious light brown color). Cook until golden (but not burnt).
- Stir in milk and broth and cook on high until boiling, then reduce to medium heat and allow to thicken until it covers the back of a spoon.
- Turn off the heat and pour the sauce over the steaks. Sprinkle with ground pepper and parsley and serve hot with mashed potatoes if you prefer.
