CHICKEN PARMESAN MEATBALLS












INGREDIENTS

  • 1 pound of chopped chicken breast
  • 3/4 cup Italian breadcrumbs
  • 1/4 cup fresh grated parmesan, divided
  • 3 cloves of garlic, minced
  • 1/2 small onion, grated (or minced)
  • 2 tablespoons + 1 cup marinara sauce (divided)
  • 1/2 tablespoon of Italian seasoning
  • 2 tablespoons fresh basil, chopped
  • 2 tablespoons chopped fresh parsley
  • 1/2 teaspoon kosher salt
  • 1/2 teaspoon freshly cracked black pepper
  • 1 large egg lightly beaten
  • 1 cup grated mozzarella cheese, to coat


INSTRUCTIONS

  • Preheat the oven to 350 ° F. Prepare a baking sheet by lining parchment paper.
  • Reserve 1 cup marinara, 1 cup grated mozzarella cheese and 1/4 cup Parmesan cheese.
  • In a large bowl, combine all other ingredients (chicken, bread crumbs, 1 cup parmesan, garlic, onion, 2 tablespoons marinara sauce, Italian seasoning, basil, parsley, salt, pepper and egg). Mix well, do not mix too much or you will have difficult meatballs.
  • Using a tablespoon of 1-1 / 2 tablespoon, divide the meat mixture and place on a baking sheet. Once all the meatballs have been picked up on a tray, roll them into meatballs.
  • Bake for 16-18 minutes until lightly browned.
  • Put the oven on the grill.
  • Pour a spoonful of marinara on each dumpling. Sprinkle with mozzarella cheese.
  • Grill for 2-3 minutes until cheese is golden and bubbling.
