Créamed Spinach Récipe









ingredients

  • 2 pounds of spinach leaves, cleaned (I often use baby spinach, but you can also use regular foods - see notes) *
  • 2 half and half cups (or whole milk)
  • 6 tablespoons unsalted butter
  • 3 tablespoons all-purpose flour
  • 1/2 cup finely chopped yellow onion
  • 4 cloves of garlic, minced
  • 1/8 teaspoon freshly grated nutmeg
  • pinch of cayenne pepper (optional)
  • kosher salt and freshly ground black pepper



Instructions

  1. Bring a large p0t of slightly salted water to a boil. Blanch the spinach in 2-3 batches (depending on the size of your pot), until tender (about 30-40 seconds). Filter the spinach leaves out of the water and immediately immerse them in a bowl of ice water to cool.
  2. Drain and squeeze or squeeze excess spinach water in a fine sieve or clean cloth. (For the creamiest spinach, do not skip this step!) If desired, coarsely chop the spinach.
  3. In a large cauldron or large skillet, melt the butter until the mousse disappears. Add the onions with 1/2 teaspoon kosher salt and 1/2 teaspoon pepper. Sauté until the onions begin to soften, about 4-5 minutes. Add garlic and c0ok until fragrant, about 1 minute.
  4. Stir in the flour and cook, stirring for 1 more minute. While stirring, pour half and half in the pan continuously. Add half a teaspoon of extra kosher salt, 1/8 teaspoon of nutmeg and cayenne pepper (if you use it). Bring to a boil, reduce the heat and simmer until the sauce thickens and covers the back of a spoon, 3-4 minutes.
  5. Add the spinach t0 the pan and mix well. It takes a bit of agitation for all the spinach leaves to be well coated with sauce. If the sauce is too thick, add a little more milk or 50/50 until the desired consistency is reached.
