Créamy Honéy Mustard Chickén Thighs

- 6 chicken legs (with bones, skin)
- 3/4 cup / 180 ml chicken broth
- 1/2 cup / 125 ml thick / d0uble cream
- Pancetta 3.5oz / 100g (can under bacon)
- 2 shallots, cut into small cubes
- 2 cloves minced garlic
- 2 tbsp. Honey soup
- 1 tablespoon Dijon mustard
- 1 tablespoon old mustard
- some sprigs of fresh thyme
- Olive oil
- Salt & Black Pepper
Instructions:
- Add a drizzle of olive oil in a large nonstick skillet over medium-high heat. Place the chicken legs on the skin side and fry until crisp. Season with a pinch of salt and pepper, then return. Reduce to medium heat, season again, then fry until white in the center. Remove from pan and pour excess fat.
- Add the pancetta and fry until it begins to brown. If there is excess fat, drain it (there are a few teaspoons), then add your shallots and fry them until they are tender. Add the garlic and fry for a minute or more, until it becomes color.
- Pour chicken broth, cream, honey, both mustards and stir to mix. Add the thyme and simmer until it begins to thicken. Season to taste, then return the chicken legs to the pan.
